• 1/2 tsp vanilla extract

  • 1 tbsp caster sugar for dusting

  • 100g caster sugar golden for preference

  • 1/2 tsp baking powder

  • 75g milk chocolate or plain. Chopped up or chocolate chips

  • 1 tbsp ground cinnamon for dusting

  • 1/2 tsp cream of tartar

  • 50g vegetable shortening

  • 1 eggs large

  • 250g plain flour

  • 75g butter at room temperature

  • 1 pinch salt

Cream the butter, shortening and sugar together, then beat in the vanilla essence and beaten egg.

Stir in the dry ingredients and the chocolate chips. Mix the extra caster sugar and cinnamon together in a shallow bowl (a pasta bowl or soup plate).

Take pieces of dough (roughly a large teaspoonful) and roll lightly between your hands to make a ball, and then roll in the sugar and cinnamon.

Place on greased baking trays and bake for about 8-10 minutes at 200C/180C fan, until lightly browned but still soft. Depending on your oven, they may take an extra few minutes.

Cool on baking racks.

Handy Hint

Combine the sugar and cinammon in a large freezer bag and shake the dough balls in that to coat instead of using a plate.

Quick to make and delicious, based on Snickerdoodles but with added chocolate chips. Children can help to roll the dough into balls and coat in the sugar mixture.
