  • 2 vegetable stock cube

  • 100ml milk (optional)

  • 4 potatoes peeled and cut in quarter

  • 1 leeks

  • 1 onions


<ol> <li>Chop and peel the onion and leek and sauté in a saucepan until soft.</li> <li>Add the potatoes.</li> <li>Quickly add in the vegetable stock (following instructions on packet if necessary)</li> <li>Let it simmer for 30-40 minutes until potatoes are soft</li> <li>When soup is ready blend and if too thick, add in milk and season with salt and pepper.</li> <li>Serve immediately</li> </ol>
