• 1 tsp vegetable oil

  • 1 red onion cut into thin strips

  • 1 tbsp clear honey

  • 1 tbsp sesame oil

  • 2 tbsp soy sauce

  • 100g turkey breast thinly sliced

  • 2-4 soft flour tortillas

  • 1 handful bean sprouts

  • 3 handfuls vegetables cut into thin strips (of your choice eg carrot, baby sweetcorn, mangetout, red pepper, raw courgette, lightly cooked green beans)

The night before:

Mix the dressing ingredients in a small bowl with a fork or whisk until thoroughly combined.

Heat the vegetable oil in a frying pan then quickly stir fry the turkey or chicken strips until cooked through.

Reduce the heat to low and add the dressing, stirring quickly so that everything gets a good coating.

Season with salt and pepper. Move the frying pan off the heat and allow the contents to cool completely before refrigerating in a sealed container.

Slice all your tasty vegetables and wrap in cling film to store in the fridge overnight.

The next morning:

Lay out your soft tortillas.

Drain the turkey or chicken using slotted spoon and arrange half of it in the middle of each wrap.

Add half of the beansprouts, onions and tasty vegetables to each tortilla.

Roll up the tortilla by folding the bottom edge up and the sides in.

Cut each tortilla in half.

Handy Hint

Wrap each half tortilla tightly in foil or greaseproof paper (not cling film). This will stop them a) unrolling and b) going soggy!

Really popular packed lunch in this house but also great for a quick at home lunch too.
