Ingredients

  • 3 eggs

  • 3 cloves garlic, crushed

  • 1 broccoli

  • 1 handful dry breadcrumbs

Method

  1. Grate the broccoli and mix with 2-3 eggs depending on the size of your broccoli. I use two eggs for a medium sized broccoli and three for a large one.
  2. Add the crushed garlic, seasoning and some breadcrumbs to combine it all together. If the mix is too dry, add another egg, water or a bit of milk.
  3. Form small balls and roll them in some breadcrumbs.
  4. Fry at 170C until golden. Can be served hot or cold.

Handy Hint

I usually fry one 'football' first just to check the seasoning.

    My kids love these broccoli footballs, its the only way I can persuade my 2 years old boy to eat broccoli and It's ideal for kids lunch box.
