Ingredients

  • 1 red pepper, finely chopped

  • 1 tbsp cheese, grated

  • 1 cucumber, finely chopped

  • 1 tbsp carrot, grated

  • 1 tbsp raisins

  • 1 handful rice, cooked

Method

  1. Mix all the ingredients together, pop in a small pot. Don’t forget a teaspoon.
  2. This is also nice with small pitta pockets to stuff, or wrapped in a flour tortilla.
  3. Try adding a small tsp of mango chutney for the more adventurous child.
  4. Obviously the ingredients are a suggestion, add whatever you have at hand and adapt to your child’s tastes. Mine like pine nuts too.

Handy Hint

Be careful how you store your cooked rice. Cool completely and then keep covered in the fridge overnight. Next day is fine but don’t leave any longer. Ideally, pop in a cool gel/ice pack to keep the pot cool in the lunchbag, especially in warmer weather.

    Simple to make, colourful and a nice change from sarnies. Great way to use up spare rice from evening meal.
