  • 1 pinch cayenne pepper

  • 1 chilli deseeded and finely chopped

  • 115g basmati rice

  • 1 splash dark soy sauce

  • 1 lemons

  • 2 tins sardines

  • 1 handful fresh coriander chopped

  • 2 spring onions finely chopped


<ol> <li>Cook the basmati rice until dry and fluffy.</li> <li>Drain both tins of sardines and put in a large bowl.</li> <li>Squeeze the juice of half the lemon over the sardines in the bowl.</li> <li>Add the dash of dark soy sauce, the finely chopped chilli and a pinch of cayenne pepper.</li> <li>Mix thoroughly.</li> <li>Add the hot rice and mix everything together.</li> <li>Divide onto four plates and sprinkle the chopped onions and fresh coriander over the rice.</li> <li>Slice remaining lemon half into quarters, and serve alongside.</li> </ol>

<p>Goes really nicely with fresh salad.</p>
