Winter vegetable stew with barley

  • 1 tbsp olive oil

  • 1 salt, (optional)

  • 500ml chicken stock, (or vegetable)

  • 1 tin chopped tomato

  • 1 parsnips, cut into slices or chunks

  • 1 handful pearl barley

  • 1/2 swede, cut into chunks

  • 1 leeks, sliced

  • 1 carrot, cut into slices

  • 1 large onions, chopped


  1. Pre-heat the oven to 180C.
  2. Saute the onion and leek in the oil until soft for about 10 minutes. Add the carrot, swede, parsnip, tomatoes, and stock and stir well. Stir in the barley.
  3. Cover and place in the oven.
  4. Stir half-way through and check to ensure the vegetables are covered by the liquid.
  5. Check after 45 minutes that the barley is soft and then serve.
