Ingredients

  • 5 tbsp tomato puree

  • 1 tbsp olive oil

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1 green pepper, chopped

  • 1 red pepper, chopped

  • 1 courgette, sliced

  • 4 tbsp dry red wine

  • 1/2 tbsp dried oregano

  • 1 tbsp dried basil

  • 2 large tomatoes, cut

  • 1 bay leaves

  • 1/2 tbsp dried marjoram

  • 5 cloves garlic, crushed

  • 1 aubergine, cut into small cubes

  • 1 large onions, diced

  • 115ml tomato juice

  • 1 pinch rosemary

Method

  1. Heat the olive oil in a large saucepan over medium heat. Sautée the onion until translucent, about 5-7 minutes.
  2. Add the bay leaf, wine and tomato juice and stir well. Then add the garlic, herbs, salt and pepper and mix until well blended. Cover the saucepan and simmer for 10 minutes over a low heat.
  3. Add the courgette and peppers, stir well, cover and simmer for another 5 minutes.
  4. Add the aubergine, tomatoes and tomato paste and stir again. Cover and continue to simmer until the vegetables are tender, about 8 more minutes.
  5. Serve over rice or with French bread.

Make some home-made bread and serve over, like a tasty sandwich with side salad! Or layer on lightly toasted French bread for a vegetarian ratatouille sandwich.

    Delicious,and if made for kids just skip the wine and use more fresh herbs like parsley and coriander!Tasty treat and great for healthy lunch-box sandwich!
