Ingredients

  • 1 splash olive oil

  • 1/2 stock cube

  • 3 red pepper

  • 4 tomatoes each cut into eighths

  • 1 clove garlic crushed

  • 1/2 cucumber cubed

  • 2 handfuls couscous

  • 4 spring onions finely chopped

  • 100g feta cubed

  • 1 splash lemon juice

Method

  1. Steep the couscous in boiling water to cover and stir in the half veg stock cube.
  2. Sprinkle the cucumber with salt and leave for 15 minutes. Then rinse salt away under tap in a colander.
  3. Core the peppers, cut into long slices and grill until almost brown.
  4. Mix all prepared ingredients into the couscous. Serve warm or cold.
