Low-fat date and apple cake

  • 250g self-raising flour

  • 2 tsp cinnamon

  • 1 tbsp honey

  • 6 tbsp sunflower oil

  • 80g dark brown sugar

  • 2 eggs

  • 1 tbsp nuts, chopped (optional)

  • 180g dates, chopped

  • 125ml apple juice

  • 2 apples, grated


  1. Preheat the oven to 180C.
  2. Grease a 20cm round cake tin.
  3. Sieve the dry ingredients into a bowl, and then stir in everything else.
  4. Beat well.
  5. Put the mixture into the tin, and sprinkle the top with the chopped nuts, if desired.
  6. Bake for an hour or so, then cool on a wire rack.
