Ingredients

  • 1 onion diced

  • 1 potato chopped

  • 1 courgette chopped

  • 1 chicken stock cube

  • 115g frozen peas

  • 1 tbsp butter (to fry)

  • 115g Greek yoghurt chopped

Method

  1. In a large saucepan, fry chopped onion and potato in butter.
  2. When translucent, add the chopped beans, courgette and peas.
  3. Just cover with boiling water and add a chicken stock cube and salt and pepper to taste.
  4. Simmer for only 10 minutes to retain vitamins and taste. Liquidise. Thin with water if desired.
