  • 1 large onion

  • 1/2-1 tins chopped tomato

  • 1 pint stock

  • 3 large carrots

  • 400g sausages


<ol> <li>Chop onion small and fry gently in pan to soften without browning.</li> <li>While onion is frying, remove skin from sausages and pull apart into small chunks.</li> <li>Turn up heat and add sausage meat, stirring it around and mashing with a fork to break it up small.</li> <li>Peel and grate carrots, and add to mixture in pan - fry another few minutes.</li> <li>Add tomatoes and liquid, and simmer for 30 minutes.</li> <li>Season to taste (may not need much depending on sausages) and serve over pasta.</li> </ol>
