Ingredients

  • 3 tins chopped tomato

  • 1 vegetable, or lamb stock

  • 1 handful red lentils

  • 4 leeks, finely chopped

  • 6 carrot, grated

  • 2 tbsp fresh basil, (to taste)

Method

  1. Using the biggest pan you have, I use a pressure cooker, cook the lentils in the stock for 20 minutes.
  2. Add the leeks, tomatoes, carrots and basil.
  3. Bring to boil, then simmer until everything is soft. You may need to top up with water to achieve the required consistency.
  4. Blend until almost smooth and serve.
