Ingredients

  • 1/2 tsp salt and pepper

  • 3 tbsp tomato puree

  • 3 tbsp oil

  • 1 green pepper, sliced

  • 1 handful cheese, grated

  • 1/4 tsp ground cumin

  • 450g stewing beef, cubed

  • 1 clove garlic, crushed or finely chopped

  • 1 beef stock cubes, made up with boiling water

  • 1 small onion, roughly chopped

  • 1 tin black beans

  • 1-2 red chilli, finely chopped

Method

  1. Brown the beef along with the onion and green pepper in the oil for a few minutes.
  2. Combine all ingredients (except the cheese) and cook for 6 to 8 hours on low. Serve with rice or tacos and sprinkle with the cheese.

Handy Hint

This is a really simple slow-cook recipe and can be easily adpated - omit the beef for a veg version, swap the black beans for kidney beans, use chilli powder instead of fresh etc.
