Ingredients

  • 225g self-raising flour

  • 1 tsp bicarbonate of soda

  • 140g caster sugar

  • 1 tsp baking powder

  • 1/2 tsp vanilla essence

  • 1/2 tsp cinnamon

  • 150ml skimmed milk

  • 1 tbsp malt extract

  • 55g raisins

  • 55g dates, chopped

  • 150ml fat-free natural yoghurt

Method

  1. Mix all dry ingredients together in a large mixing bowl.
  2. Mix all wet ingredients together in a separate bowl, then make a well in the dry ingredients and pour in the liquid.
  3. Fold together until just combined, but be careful not to overmix as this will result in a tough muffin.
  4. Pour mixture into a cupcake or muffin tray lined with muffin cases and bake for 18 mins at 200C.

Handy Hint

To make any fruity muffin you can substitute dried fruit, any variety e.g. dried cranberries, blueberries, cherries, apple, pineapple, sultanas e.t.c, weight for weight and leave out malt extract.
Once made much better eating if left overnight.
To make them dairy free subsitute milk and yogurt for soya products works as well.

    Easy to do - and it didn't taste like it was low-fat. Job done!

    Very good for a treat if you have to have a fat free diet. And great for kids if you want to watch their fat intake.
