  • 115g caster sugar

  • 85g golden syrup

  • 1 orange zested (unwaxed if possible)

  • 230g oats

  • 115g butter


<ol> <li>Melt the butter, sugar, syrup and orange zest in a pan over a low heat until the butter has melted, stirring occasionally.</li> <li>Stir in the oats.</li> <li>Turn out into a tray (I use an 8 x 8 inch tray for this quantity) and press the mixture down flat.</li> <li>Cook for 15-20 minutes at 180C/Gas Mark 4, until the edges are browned.</li> <li>Leave to cool then cut into slices.</li> </ol>

Handy Hint

<p>I use my Parmesan grater to grate the zest finely.</p>

    Orange zest is good for you apparently. As with all flapjack, don't let it overcook or it will be too hard - just brown around the edges is fine. I use a silicone tray for this so the the flapjacks just slide out.
