Ingredients

  • 1 onion, peeled and chopped

  • 1 tin chopped tomato

  • 200ml stock, lamb or beef

  • 1 splash red wine

  • 1 handful rosemary, chopped

  • 400g lamb, cubed

  • 1 bag root vegetables

Method

  1. Soften the onion in a little oil, add the lamb and allow it to brown.
  2. Add the mixed veg and stir for a couple of minutes allowing them to cook slightly.
  3. Add the rest of the ingredients (bar the rosemary) and simmer for 30 minutes or so until sauce has thickened. Stir in the rosemary.
  4. Serve with bread or rice.
