  • 225g self-raising flour

  • 1 tsp mixed spice

  • 450g dried fruit, mixed

  • 115g demerara sugar

  • 1 eggs, beaten

  • 150ml tea, hot, no milk


  1. Start the night before by mixing the tea and sugar together, and soaking the fruits in it.
  2. The next day stir the egg into the fruits.
  3. Sieve in the flour and spices.
  4. Mix well and pour into a 1lb loaf tin.
  5. Bake for 1-1.5hrs at 170C/Gas Mark 3.
