  • 225g self-raising flour

  • 1 tsp mixed spice

  • 450g dried fruit mixed

  • 115g demerara sugar

  • 1 eggs beaten

  • 150ml tea hot, no milk


<ol> <li>Start the night before by mixing the tea and sugar together, and soaking the fruits in it.</li> <li>The next day stir the egg into the fruits.</li> <li>Sieve in the flour and spices.</li> <li>Mix well and pour into a 1lb loaf tin.</li> <li>Bake for 1-1.5hrs at 170C/Gas Mark 3.</li> </ol>
