Ingredients

  • 1 red onion thinly sliced

  • 2 tbsp sweet chilli sauce

  • 4 slices wholemeal bread

  • 250g halloumi one pack

  • 1 handful baby spinach

Method

  1. Put bread in toaster.
  2. When bread is toasted, spread butter on top, place halloumi between two slices and pan fry on both sides, with no oil, for about 10 minutes.
  3. Layer with plenty of fresh spinach and slices of red onion and then dribble on sweet chilli sauce (generously!), finishing with freshly ground pepper.

Handy Hint

Tastes even better when combined with a good cup of tea!
