Ingredients

  • 450ml milk

  • 50g cheddar, (preferably mature)

  • 2 tbsp flour

  • 1 large leek, chopped

  • 4 slices bacon, chopped

  • 1 clove garlic, chopped/crushed

  • 175g pasta

  • 1 handful Parmesan, (to serve)

  • 1 knob butter

  • 1 handful frozen peas

Method

  1. Put leeks, garlic and bacon into a pan and fry for 2-3 minutes in olive oil.
  2. Add butter and fry until melted.
  3. Add the flour to make a gloopy dough. Add more if necessary.
  4. Start to cook pasta.
  5. Add in the milk slowly, stirring all the time until the mixture starts to boil and is the consistency of custard.
  6. Add peas and cheese and stir until cheese melts.
  7. In the meantime cook the pasta as per instructions.
  8. Stir pasta and sauce together and serve.

Handy Hint

Serve with loads of Parmesan and garlic bread!
