Ingredients

  • 0.5 tsp vanilla extract

  • 0.5 tsp cinnamon

  • 60g honey

  • 30g butter

  • 150g plain flour

  • 0.5 tsp bicarbonate of soda

  • 2 bananas, large, ripe

  • 1 tsp baking powder, heaped

Method

  1. Preheat oven to 190C/Gas Mark 5. Melt the butter, honey and vanilla together over a low heat, then set aside to cool for a few minutes.
  2. Mash the bananas.
  3. In another bowl measure out the flour, baking powder, bicarbonate of soda and cinnamon.
  4. Mix the bananas into the melted butter mixture and then mix that into the dry ingredients.
  5. Fill paper cases about 2/3 full and bake for about 25 minutes (but they often take less time).
  6. Cool on a wire rack.

    Great to use up over-ripe bananas - instead of throwing them away! Kids love them.
