Cinnamon and vanilla biscuits

  • 1 egg yolk

  • 140g caster sugar

  • 3 tbsp vanilla essence, or actual vanilla

  • 250g butter

  • 300g plain flour

  • 1 tbsp cinnamon sugar, (you can buy or make yourself by mixing granulated sugar and cinnamon)


  1. Mix butter and sugar, add egg yolk and vanilla, mix and sift in flour. Once you have mixed and formed a dough, roll and cut into whatever shape you fancy. We tend to go for stars.
  2. Once cut and ready to go in the over, melt some butter and generously brush the top of the biscuits with the butter, then sprinkle on the cinnamon sugar. Or you can dip whole biscuit in the butter and then in the cinnamon sugar to get all over sugar.
  3. Bake for 10-15 minutes.
