Butterbean baby purée

Ingredients

  • 1 tsp olive oil

  • 1 handful spinach

  • 1 leek

  • 300ml water

  • 1 tin butter beans, cooked

Method

  1. Sautée leek for 5 minutes. Put spinach in, pour over water and cook for another 5 minutes.
  2. Add butter beans to heat through.
  3. Whisk to desired consistency. Serve.

Can be used as older kids' dip with bread sticks or on toast

    Perfect for weaning and stopping an overdose of orange food! Developed after DS got 'carotenemia' (http://emedicine.medscape.com/article/1104368-overview)- honestly, sounds like a joke but it?s a recognised condition caused by too much beta-carotene, very prevalent in weaning foods! It's not serious but made him look like I'd given him a spray tan and had a baby Dale Winton on my hands. So to avoid an orange baby, strange looks and a rush to the docs with suspected jaundice, mix it up with some iron-rich and nutritious baby butter bean puree.
