  • 125g self-raising flour

  • 125g caster sugar

  • 1 tbsp milk

  • 1 tsp baking powder

  • 1 tsp vanilla essence

  • 125g unsalted butter

  • 2 eggs


<ol> <li>Preheat the oven to 180C and line a cup-cake tray with paper cases.</li> <li>Put all the ingredients (except the milk) in a blender.</li> <li>Blend until smooth, add the milk and spoon into cupcake cases.</li> <li>Cook in the oven for about 15 minutes.</li> <li>Leave to cool then ice.</li> </ol>

    Very easy and quick. To include in your cookbook I think I would suggest some variations. Eg, instead of vanilla essence, use the grated rind of one orange or one lemon; add 1/2 tsp ground cinnamon and put a slice of eating apple on top before baking; put a whole raspberry into the cake before baking etc. and maybe mention ideal proportion of liquid to icing sugar for making the icing.
