Quick and easy smoked salmon risotto

  • 500ml vegetable stock

  • 500g arborio rice

  • 1 lemon juiced

  • 200g smoked salmon torn up

  • 60g peas

  • 500ml Worcestershire sauce

  • 1 knob butter

  • 1 handful Parmesan shavings (to serve)


<ol> <li>Melt butter in pan. Add rice and stir till fully coated.</li> <li>Add rest of ingredients (except parmesan).</li> <li>Bring to boil, quick stir, then leave to simmer for 15 mins.</li> <li>Serve with Parmesan shavings sprinkled on top.</li> </ol>

    Sorry - this just doesn't look right. 500ml of Worcestershire sauce would be horrible. Surely a teaspoonful or tablespoon at the most. Personally, I can't imagine it going well with smoked salmon but I might be wrong. You would need more than a pint of stock for over a pound of rice. Have never seen a risotto that didn't have onion and/or garlic.
