Quick and easy smoked salmon risotto

  • 500ml vegetable stock

  • 500g arborio rice

  • 1 lemon juiced

  • 200g smoked salmon torn up

  • 60g peas

  • 500ml Worcestershire sauce

  • 1 knob butter

  • 1 handful Parmesan shavings (to serve)


  1. Melt butter in pan. Add rice and stir till fully coated.
  2. Add rest of ingredients (except parmesan).
  3. Bring to boil, quick stir, then leave to simmer for 15 mins.
  4. Serve with Parmesan shavings sprinkled on top.
