Idiot-proof berry and caramel pudding

Ingredients

  • 600ml cream

  • 2 tins caramel

  • 2 handfuls blueberries

  • 400g lady's fingers

  • 2 handfuls raspberries

Method

<ol> <li>Place a layer of finger biscuits in square dish. Mix the berries together and add over biscuits.</li> <li>Beat the caramel until pouring consistency and pour over berries. Whip cream till spreading consistency and pour over caramel.</li> <li>Garnish with flake or grated chocolate.</li> </ol>

Handy Hint

<p>If you want you can pour a bit of berry juice or some cassis (for alcoholic version) over the berries to moisten them, but don't make too soggy.</p>

    This very quick and easy pudding is my " please bring along a pudding" staple. The contrast between the sharpness of the berries and the sweetness of the caramel is fab. A hit every time and it takes no cooking. Most work you have to do is a bit of beating.
