Ingredients

  • 1 tbsp olive oil

  • 1 stock cube, (like bouillon)

  • 1/2 red onion

  • 1 lemon

  • 1 handful fresh mint, chopped

  • 2 tomatoes

  • 250g couscous

  • 2 handfuls flat-leaf parsley, chopped

Method

  1. Make the couscous according to packet instructions but use stock instead of water.
  2. Add a tablespoon of olive oil
  3. When couscous is ready add lemon juice to taste
  4. Add chopped parsley and chopped mint
  5. Add finely chopped red onion and tomatoes
  6. Use a fork to gently mix up all ingredients
  7. Season to taste

Handy Hint

Put a lid on the couscous while it's soaking up the water. Make it in a bigger bowl than you might serve it in as you need space to mix in all the ingredients. It's great with grilled haloumi and peppers.
the more fresh parsley the better as far as I'm concerned!
