Chicken korma

Ingredients

  • 1/2 onion, finely chopped

  • 1 tbsp oil

  • 2 tbsp sugar

  • 4 chicken breast, cut into bite-size pieces

  • 1 tsp turmeric

  • 165ml coconut milk

  • 1/2 tsp ground coriander

  • 1/2" cinnamon stick

  • 2 cloves

  • 3 cardamom pods

  • 1 handful mixed nuts, chopped (optional)

  • 2 tbsp cream, (optional)

  • 75g raisins, or sultanas

Method

  1. Heat the oil in a large pan or wok and add the onion.
  2. Begin to cook the onion over a low to medium heat and add the spices (turmeric, cardamom, clove, cinnamon, coriander) and half of the raisins or sultanas.
  3. Add the chicken to the pan and mix it round for a few minutes. Add a small amount of water, cover and cook for about 10 minutes.
  4. Next, add the coconut milk, cream and the remaining raisins or sultanas and the nuts.
  5. Bring to the boil and then simmer on a low heat. Add the sugar and continue to simmer on low until the sauce has thickened and chicken has cooked through.

Handy Hint

Do NOT add salt, or garlic! This dish is slightly sweet so add sugar according to how you like it. The longer you cook it the darker colour the sauce takes on so if you want to have a bright creamy yellow sauce then don't cook it much after you added the cream.
