Carrot and lentil soup

Ingredients

  • 4 potato sliced

  • 1l vegetable stock

  • 200g red lentils

  • 1 clove garlic chopped

  • 1 onions chopped

  • 2 carrot sliced

Method

<ol> <li>Sweat the carrots, potatoes, onion and garlic in a pan for about 5 minutes.</li> <li>Wash the lentils thoroughly and soak for 10 minutes.</li> <li>Add the lentils and veg stock and bring to the boil.</li> <li>Lower the heat, cover and simmer for about 35 minutes. Blend or serve as is.</li> </ol>

Handy Hint

<p>I don't blend mine as it's yummy with chunky carrots and potatoes but my DD prefers hers blended.</p>

    I made this several times in the winter. I also think it needs something to give it some zing - I added lots of lemon and chopped italian parsley at the end, and/or added some chopped chorizo or similar to the frying stage at the beginning.

    This has quickly become our favourite quick, cheap and easy supper or lunch dish. It's very warming and filling with crusty bread. I do prefer it blended and I sometimes add a couple of sticks of celery to it as well.

    I took EquestrianStatue's advice and added chopped ginger, crushed chilli flakes and a squeeze of lemon. I also upped stock to 1.5 litres. Clean bowls all round.

    I also add some chopped ginger and red chilli, and a squeeze of lemon juice just before serving.

    just made this as part of my austerity measures/ healthy eating.I adde chilli powder and a bit of cumin to the pan as I was sweating the veggies. it's delish, healthy, filling and dead cheap too! dead simple.will add this to my list I whizzed mine down and it was quite thick,I think I'd tweak amount of stock (maybe do a litre and a half of stock)
