  • 1 tsp wholegrain mustard

  • 1 plum tomatoes (one per person)

  • 1 tsp Parmesan (optional)


<ol> <li>Pre heat the oven to 180C</li> <li>Cut tomatoes in half, remove green bit at top</li> <li>Place tomato halves skin sides down on roasting tray</li> <li>Put thin layer of mustard over top of tomatoes</li> <li>Drizzle or spray with olive oil</li> <li>Sprinkle with small amount of Parmesan (if using)</li> <li>Season according to taste</li> <li>Roast in oven for 15 minutes</li> </ol>
