1 pint double cream
2 lemons, juiced and rind grated
1 bowl iced water, (for cooling)
- Bring the sugar and cream to boil. When boiling reduce to simmer for exactly 3 minutes.
- Remove from heat and cool in iced water for 3-4 minutes.
- Stir in juice and rind.
- Pour into serving bowls and chill until set.
Wine glasses make excellent serving dishes.
