  • 1/2 onion chopped

  • 200ml double cream

  • 1 leek chopped

  • 5 tbsp water

  • 300g smoked haddock dyed or undyed

  • 2 baking potatoes unpeeled and thinly sliced

  • 1 handful small prawns


<ol> <li>Skin and tear the haddock into small chunks and lay at the bottom of a large glass casserole dish.</li> <li>Tip in chopped onion, prawns and leeks.</li> <li>Pour in the double cream and water. Bake at 200C for around 30-40 minutes.</li> <li>Remove from oven and lay the sliced potato on the top until the mixture is evenly covered.</li> <li>Bake for a further 30-40 minutes, until the potatoes are soft and golden brown and the mixture in bubbling.</li> <li>Serve with steamed green veg.</li> </ol>

    Easy and tasted lovely. Pretty flexible too; didn't have leeks so added a bit of broccoli instead (!) and a handful of grated cheese in the mix. also shoved mash on as didn't have time for the proper potato to cook and it was still great!

    made it a few weeks ago going to make it again this week going to add a bit of salmon to it as well this time very tasty
