Easy cauliflower and horseradish soup

Ingredients

  • 2 pints vegetable stock

  • 2 tsp horseradish

  • 2 medium potatoes, diced

  • 2 onions, finely chopped

  • 1 medium cauliflower, chopped

Method

  1. Fry onions until soft.
  2. Add diced potatoes, chopped cauliflower and vegetable stock.
  3. Cover and simmer on a low heat for 30-40 mins. 4. Take off heat blend and stir/blend in the horseradish sauce.

    The horseradish sauce makes it flavoursome rather than spicy so children love it as well as it's really creamy.
