Strawberries in balsamic vinegar and orange juice

  • 1 tbsp soft brown sugar, to taste

  • 2 tbsp balsamic vinegar

  • 300g strawberries

  • 1 1/2 orange, juiced and zested

  • 1 bowl cream, or creme fraiche


  1. Hull the strawberries and halve them if large. Place in a small bowl.
  2. Combine the balsamic vinegar, orange juice and zest and brown sugar and pour over the strawberries.
  3. Leave to marinate in the fridge for up to an hour before serving with cream or creme fraiche.

Handy Hint

This is a good way to prepare strawberries which are not perfectly ripe.
