Ingredients

  • 1 onion, chopped

  • 80g cheddar, cubed

  • 1 red pepper, diced (or substitute whatever other vegetables you fancy)

  • 1/2 pints stock

  • 1 tin tomatoes

  • 100g rice

  • 1 garlic, chopped

  • 1 chicken bovril , chopped (or more if you like)

Method

  1. Fry the chicken breast, onion and garlic in oil.
  2. Stir in the rice and fry for a minute or so.
  3. Add the stock, tomatoes and vegetables.
  4. Simmer for 10 minutes.
  5. Transfer to an oven-proof dish.
  6. Stir in half the cheese. Scatter the rest across the top.
  7. Bake for 20 minutes at 180C.
