Ingredients

  • 1 onion chopped

  • 80g cheddar cubed

  • 1 red pepper diced (or substitute whatever other vegetables you fancy)

  • 1/2 pints stock

  • 1 tin tomatoes

  • 100g rice

  • 1 garlic chopped

  • 1 chicken bovril chopped (or more if you like)

Method

<ol> <li>Fry the chicken breast, onion and garlic in oil.</li> <li>Stir in the rice and fry for a minute or so.</li> <li>Add the stock, tomatoes and vegetables.</li> <li>Simmer for 10 minutes.</li> <li>Transfer to an oven-proof dish.</li> <li>Stir in half the cheese. Scatter the rest across the top.</li> <li>Bake for 20 minutes at 180C.</li> </ol>
