Ingredients

  • 2 tbsp tomato puree

  • 4 tbsp olive oil

  • 125g caster sugar

  • 1 tsp salt

  • 1kg red onion, finely sliced

  • 300ml wine vinegar

  • 2 bay leaves

  • 4 cloves

  • 1 tsp ground black pepper

  • 1 pinch chilli powder

Method

  1. Saute onions in oil until transparent.
  2. Add the other ingredients, cover and cook gently for 1 hour.
  3. Continue to cook gently until it has the consistency of marmalade.
  4. Pour into sterilised jars and store in a cool place - it will keep for a long time!
