  • 1 onion roughly chopped

  • 3 tbsp olive oil

  • 1 stock cube

  • 4 potato peeled and finely sliced

  • 1 bouquet garni

  • 750g stewing lamb or leg of lamb

  • 1 clove garlic optional

  • 4 carrot garni

  • 4 tsp plain flour

  • 2 tbsp Worcestershire sauce

  • 240ml white wine


  1. Coat the lamb in the flour, and fry in a hot pan in a tablespoon of olive oil for 4-5 minutes until brown.
  2. Place the lamb in the bottom of a Pyrex dish with a lid.
  3. Make up 500ml of stock and add to the pan with the Worcestershire sauce. Boil for 2 minutes then add to the meat. Switch your oven on to 150C.
  4. Wipe out your frying pan with a piece of kitchen paper then fry the carrots and onion until they brown in a tablespoon of oil.
  5. Throw the vegetables in with the meat. At this point add the garlic and wine if using.
  6. Layer potatoes over the top of the meat and vegetables and finish with a drizzle of olive oil and some black pepper.
  7. Put a lid over the dish and place in the oven for 1.5 hours. Then, remove the lid and return to the oven for 45-60 minutes until the potatoes are crisp.

    Easy, cheap ingredients. Suitable for younger children. Freezes & refrigerates well.
