Fabulous fried feta

 

"Roll cubed feta in some flour, and fry in some oil for three/four minutes until golden and crispy on the sides. Add to salad and eat."
  • Red onion

  • Oregano and basil - drizzled with red wine vinegar and some black pepper 



In the jar


"I'm trying to make mine look more exciting so I've been having salads in a jar. Everyone has said how nice they look."

  • Lettuce

  • Tomatoes
  • Apple
  • Crayfish tails / smoked salmon
  • Celery
  • Red pepper
  • Boiled egg 


Roasted and toasted

 

  • Sweet potato/pumpkin, roasted in small cubes
  • Baby gem lettuce or spinach 
  • Feta or goats cheese
  • Crispy bacon
  • Toasted pine nuts
  • Grilled mushrooms 
"Serve with a light dressing, like French, and add chickpeas for a bit of protein."


Seeds, fruits and leaves

 

  • Cucumber
  • Cauliflower
  • Broccoli
  • Red pepper
  • Tomato
  • Small shallot, finely chopped
  • Can of chickpeas/cooked lentils/mixed bean salad, well drained
  • Handful chopped feta 
  • Half handful dried cranberries 
  • Pumpkin seeds
  • Dressing: 3 tablespoons of olive oil plus 1 tablespoon each of maple syrup, mustard and white wine vinegar. Combine thoroughly, pour over salad, mix well.

Low carb combo

 

  • Sugar snap peas, sliced in half
  • Radish, grated
  • Cucumber, batoned thinly
  • Spring onion, sliced thinly 
  • Dressing: 2 tbsp cider vinegar and 1 tsp honey
"It is yummy! We have it with grilled chicken breast or halloumi."


The goat's cheese gamechanger

 

"I actually never ate a salad until a few months ago. I went into a cafe and they had a huge sign with a goat's cheese salad so I thought I would try it. Oh my GOD, it was the most amazing thing I have ever tasted."
  • Mixed leaves - loads of rocket and dark leaves
  • Sun dried tomatoes 
  • Warm goat's cheese
  • Bacon bits
  • Balsamic dressing 
  • Pine nuts

  • Leftover roast chicken
  • Cheese, cut up small
  • A few cashews

"Add a teaspoon of pesto drizzled over and a spoon of hummus on the side with a toasted wholemeal pitta." 


Make ahead meal

"Best if made an hour before eating."

  • One large head of broccoli, cut into florets 
  • 1 small red onion, chopped 
  • 6 slices cooked bacon, crumbled 
  • 60g dried cranberries 
  • 35g sunflower seeds 
  • 70g almonds, toasted in a dry pan
  • Dressing: 4 fl oz/125g mayonnaise, 75g white sugar, 3 tbsp red wine vinegar


Griddled chicken pasta salad

 

  • Griddled chicken
  • Bacon
  • Wholewheat pasta
  • Baby plum tomatoes
  • Salad onions
  • Red peppers
  • Cucumber
  • Sweetcorn
  • Avocado
  • Hard boiled eggs
  • Beetroot
  • Green pesto

"I usually drizzle balsamic vinegar or olive oil as the dressing."


Reds and greens

 

  • Rocket leaves
  • Red onion, sliced thinly
  • Watercress
  • Red pepper, sliced thinly
  • Hard boiled egg
  • Cucumber
  • Red grapes
  • Dressing: homemade honey and mustard (tsp honey, tsp grain mustard, cider vinegar - shake till mixed)
"I love strong flavours so tend to avoid tomato as it can be a bit insipid (unless sundried in oil which is yummy). Add some coleslaw or home made potato salad and you have a brilliant meal."

Boozy bacon

 

"I must admit with salads I like to get big portions with the least amount of calories."

  • Spinach + any other leaves you have to hand
