Perfect American-style pancakes

To celebrate Pancake Day (9 February 2016), we're dishing up not one but TWO delicious options for your Shrove Tuesday feast

Chocoholic? Try this glorious hack for scrumptious Nutella-stuffed pancakes. Prepare to succumb to melt-in-the-middle chocolate centres, topped with fresh strawberries (and yes, even more chocolate).

 


And for those wanting something a little less sweet: a satisfying savoury alternative starring crispy bacon, colourful fresh veg and a sprinkling of cheese.

 


Method

To make the pancake batter 

Combine in a large bowl:

  • 225g (1 cup) plain flour
  • 1 teaspoon white sugar
  • 1 tablespoon baking powder
  • 1 pinch of salt

Make a well with two fingers and drop in:
  • 2 large eggs

  • 30g butter (melted and cooled)

  • 300ml (1/2 pint) milk

Leave to chill in the fridge while you prepare your fillings.


For sweet, Nutella-stuffed pancakes

Line a baking tray with grease-proof paper and spread on to it heaped tablespoons of

  • Nutella chocolate spread (we did ours about 6cm across)

Place the tray in the freezer for half an hour or so, to allow them to firm up.

Ready to go? Melt a little butter in a frying pan then add a spoonful of pancake batter (we allowed enough to make pancakes about 10cm across).

After a minute, drop on one of your chilled Nutella disks, then cover with an extra spoon of pancake batter. 

Once the surface of the batter begins to bubble and the underside is browning, it's time to flip! 

Continue to fry until cooked through, then dish up topped with fresh fruit - and more chocolate.



For the savoury pancake filling

Fry each ingredient until cooked (or crispy, for the bacon!) then combine in a bowl:

  • Bacon strips, cut into squares

  • Spring onions, chopped

  • Mushrooms, finely chopped

  • Red or green pepper, cut into chunks

  • Tinned sweetcorn

Ready to go? Melt butter in a frying pan then add a spoonful of pancake batter (we allowed enough to make pancakes about 10cm across).

After a minute, dollop on a generous spoonful of the savoury stuffing mix, followed by a sprinkling of grated cheddar.

Once the surface of the batter begins to bubble and the underside is browning, it's time to flip! 

Continue to fry until cooked through, then dish up topped with some spring onions.
