Blw and sweet potato

Probably a stupid question- sorry! But have a sweet potato in the fridge and a nearly 8 mo dd who will only eat finger foods. No mush, no spoons. So how should I cook the sweet potato? I never use them myself so not sure how to prepare it in a way that I can make finger food out of it...

Also, once cooked, will it last 2 or 3 days in the fridge?

Cut into wedges and bake in the oven. They cook a lot quicker than ordinary potatoes, probably only takes about 20 mins.

I would probably cut it into cubes and roast it. But it wouldn't get anywhere near the baby- I would have eaten it straight out of the pan.......

I used to make it into 'chips'. Just chop it up into fingers, brush with a little oil, spread on a baking tray and put in the oven. Takes about 20-30 minutes depending how thick cut they are, IIRC.

Ah great- that's what I was hoping. Cool- will be done and cooled in time for her supper (she refuses any warm food).

Dust them with cumin first.

Or dust half with cumin and see which she prefers. Mine would kill for anything with cumin!

Skin off I think at this age. You don't want to put her off a new taste by the texture.

They also freeze well. I do little foil portion packets then bung them in the oven for 15 mins.

Skin on for me, I never bother peeling either potatoes or sweet potatoes for wedges

I leave the skin on for roasting. Once they're cooked you can just peel the skin off with your fingers.

My DS adores them. Though, like Hakluyt I often eat them before he gets a chance.
