It was an operatic piece in the middle, three female sopranos ( i think).

Anyone have any ideas what it's called?

Found the answer:

It is Salve Regina (based on Pachelbel Canon) sung by All Angels.

Ah beaten to it! The All Angels album it's taken from is mostly really good but the Salve Regina piece is one of my favourites and was lovely in the context of the program, even though I think it's more of a Catholic piece of music.

I often put the album on in the background if I have guests for dinner or something, it works really well.
