The Lake District Cheese Company would like to feature some of your easy cheesy recipes, questions and tips for cooking with cheese on their Mumsnet hub (coming later this month).

The Lake District Cheese Company is part of First Milk, the largest dairy farmer co-operative in the UK. With their roots firmly in the Lake District, they source the finest milk from local and surrounding farms, producing a deliciously moreish cheese that embodies all the values and traditions of the Lake District.

They would also like to use some of your recipes, questions and tips in videos which will be hosted by a Lake District chef, Lucy Nicholson from "Lucy's of Ambleside" LucyCooks Cookery School which will be shown on Mumsnet and elsewhere.

So, is there anything you'd particularly like to see Lucy cook, demonstrate or talk about in the videos? Would you like some new ideas for cooking with cheese? Do you have a best ever way of including cheese in your everyday food, what's your favourite cheese recipe? How do you make cheese dishes healthy for all the family?

Here's a recipe...

Hidden Cheeseburgers

To a pack of lean steak mince, add a sprinkling of flour and an egg to help bind the burgers (although for those with gluten or egg allergies, these could be left out) and then whatever seasonings you fancy. I tend to use a sprinkling of herbs and some tomato puree but you could use chilli powder or flakes, Lee and Perrins, a dollop of BBQ sauce, salt, pepper, a crumbled stock cube etc...

Squidge the mix together with your fingers - this is a great one for kids - then form into thin burger shapes. You only want them to be 5-6mm thick.

Cut some pieces of cheese about the same thickness and about 1cm smaller all round than the burgers. Sandwich a piece of cheese between 2 of the thin burgers and press them together to make 1 large burger with a piece of cheese in the middle.

Grill for about 10 minutes, turning occasionally. Serve in bread rolls with a lovely salad.

The cheese will melt as the burgers cook and ooze out as you eat them. Yummy.

I have a cheese tip, in case Lucy doesn't take my question seriously:

Dried-up leftovers of strong hard cheeses, such as Lincolnshire Poacher or really good Cheddar, can be finely grated and used instead of Parmesan.

Grated cheese works well on top of a Cottage pie or you can make cheesy dumplings to top a stew...Mmmm, guess what I want now?

Both would work well with dried up leftovers too as they get melted.

You can add the leftovers from a roast chicken to cheese, red/green peppers, mushrooms and, if you like them, sliced chillies and spread over a flour tortilla. Top with another tortilla and dry fry in a hot frying pan. Once the cheese is melted, slice like a pizza and enjoy with some tomato salsa. Yum. I want Enchiladas now too

Our entire family (including the cat!) are cheesemonsters. DS (3) loves the stuff, even Stilton and cheddar with garlic, herbs and chilli in!

I personally think the best recipe is still a straight mature cheddar quiche - beat 1/4pt milk, 3 eggs, 1/2tsp English mustard, dash Worcestershire sauce.
Line a quiche dish with pastry, cover with grated cheese, add a layer of finely diced onion, cover with more cheese (we tend to get through quite a lot!) and then pour the egg mix evenly over it. Bake gas 6 200C for 35-40 mins or until set and golden on top. Serve with new potatoes.

You can garnish with tomato slices if you like, or spread a layer of tomato puree onto the pastry.
Variations are of course endless depending on what you have lurking in the fridge, but I still think plain cheese and onion beats the lot.

Sadly DH is of the mind that real men don't eat quiche (which leaves more for me and my Dad!) and would rather do cheese-covered nachos with all the trimmings. DS calls those triangle crisps and I suspect that it's his favourite meal. Even if he's not allowed it very often!

I love this recipe

Caramalised Onion and Goats Cheese Open Tart

Dice 2 large onions finely and cook on a simmer in 30g melted butter with one clove of crushed garlic for 5 mins stirring continiously. Then stir in 2 tbsp of runny honey and 1tsp of ground black pepper. Cook on simmer for 3-5 mins until the onions are softened and caramalised. Stir in 100ml of red wine and turn the heat up. Cook until the mixture is almost dry. Remove from the heat and leave to cool. You can add a few finely chopped sun dried tomatoes at this point if you want.

Either roll out some puff pastry or use a ready rolled piece (about 25x35cm rectangle). Score a line about 1 inch in all the way around. In the centre spead the onion mixture out and then add some crumbled up goats cheese. Bake for approx 20 mins et voila!

Retro and lovely!!

1/2 pound Lake District chesse
1/2 pound Gruyere cheese
2 tablespoons flour
1 garlic clove (diced)
1 cup dry white wine
1 tablespoon lemon juice
1/2 teaspoon dry mustard
Pinch of freshly grated nutmeg

Assorted dipping foods such as cubed day-old French bread, cubed ham, blanched broccoli, carrots, or cauliflower, cherry tomatoes, chopped green bell peppers, peeled and chopped apples or pears

Melt the grated cheese in a large pan with other ingredients until it's all gooey and delicious. Dollop into a warmed dish and serve with the dipping foods.

My recipe is adapted from a morrisons mag recipe;

Cous cous fritters

make up cous cous with stock cube
add loads of grated cheese
some softened red onion (and some peppers if you have any in the fridge)
salt, pepper and herbs of your choice
bind with a beaten egg

fry in fry light till golden on either side

They are scrummy dipped in tomato sauce and once cold they are good in kids lunch boxes.

My 3 year old doesn't like cheese, except on pizza like me blush. However she asks "Is there cheese on this pizza?" and we have to lie and say "No, it's not cheese pizza, it's just pizza pizza" wink

OTOH dd2 loves cheese. Both of them like pasta with halved cherry tomatoes chucked in, so I serve dd1's like that then grate cheese over dd2's.

Also for dd2 I do scrambled egg with cheese grated in.

{hmm] I think I could do with more cheese ideas. All I seem to do is grate it over/into stuff confused

Mature cheddar on baked beans or on Tuna mayo - yum!

Cheese is the food of gods if it wasn''t so damn fattening i would live off of it.

I am particuarly fond of Lake District Cheese on Toast with Worchester Sauce and Mustard or some Caramelised onion chutney... <drool>

It is also beautiful to stuff into a Chicken Breast with some sauted mushrooms and Onions.

I use a basic cake recipe - with no sugar obviously, to make cheese and pesto cupcakes for my very fussy DD. An excellent way of using up cheese (it even works with those dreadful string cheese things) and increases her protein intake during lunch massively.

They are quite nice with cheese and caramelised red onion chutney as well (but you have to add more baking powder to counteract the wetness preventing rising.)

I love to melt some stilton in the microwave and pour it over steak and broccoli. Actually I'll eat cheese whatever, I just love it!

A nice strong cheese goes very well with fruit cake too, especially Christmas cake. Yum!

get some nice plump chicken breast slice at the edge to form a pocket. best to only make a smallish incision nd then get your fingers in there to widen the pocket

then add the cheese of your choice into the middle of the chicken pocket.

wrap in lovely smokey bacon. hold in place and close the incision with cocktail sticks.

cook in the oven and when its done and you slice into the chicken you have lovely melted cheese in the centre of the chicken

they are small but sweet and you can get them from the deli counter at the supermarket.

its the simplest, quickest loveliest snack.

you get some soft cheese and stuff the peppers.

don't have to cook or anything. absolutely delish.

Quick carbonara,

fry onion & bacon whilst cooking pasta, grate mature cheddar, drain pasta, mix in cheese and few spoonfuls of milk.
Add onion & bacon, use leftover cheese to put on top & serve.

I like this version because it is qucik & caters for fussy people who don't like the bacon & onion (dd) and I serve it with peas/sugarsnaps etc. Lovely smile

Lovely goats cheese nibbles
Wrap up half a fig, a dollop of goats cheese in a little parma ham parcel. Delicious.

My other tip is to put your parmesan rinds etc into any veg style soup you do.

Toasted cheese and onion sandwich (in sandwich maker) is surely the best way to eat cheddar.

If you want something a bit fancier but just as easy, cheese and veg omelette: slice up some veg (whatever's in the fridge but I like mushrooms and cherry tomatoes) and fry in oil in small frying pan for a few mins until soft. Put in a bowl and stir in some grated cheese. Then beat 2 eggs and put back in frying pan, cook for a couple of mins stirring a little with a fork til the eggs have set, spoon the veg and cheese mix over half the omelette and fold over the other half and warm through for a minute or two. Serve with big pile of chips

Make lasagne with 250g of mince, I/2 tin of tomatoes, 1onion and celery. Cook it all down then add 200g of spinach and 150g of ricotta cheese. Mix it all together and then layer with fresh lasagne. Finish with chopped basil, passata50mls and pour over lasagne. Grate Parmesan all over the top.

Yummy and incredibly low fat. No need for White sauce, very moist.

I love a cheese and banana sandwich. Has to be a really strong, sharp cheddar to counteract the sweetness of the fruit. Best on some really good, fresh granary bread. Yum.

This is one of my favourite recipes, chop up a tin of corned beef add a pile of boiled potato a glug of milk a knob of butter and some salt n pepper mash it all up -layer the top liberally with grated mature cheddar and put back in the oven until cheese toasts and goes crispy.

Yum yum.

left over veg?

mash it all up with a couple of eggs spoon into the pan and make kind of a veggie burger shape sprinkle top with mature cheddar flick over and fry til crispy.

My 2 very simple top cheese tips:

When making cheese on toast put some fruity chutney under the cheese. V yummy.

Save rinds from parmesan cheese. Add them to soup as it's simmering, fish them out before serving. Gives the soup a lovely, rich umami flavour.

My question: Any tips on assembling a balanced cheese board using more unusual cheese, maybe some more specialised regional cheeses rather than the usual stilton, brie etc.

The best cheese recipe has to be macaroni cheese with bacon, onions and cherry tomatoes. I use a mixture of mature cheddar, edam and gruyere in my cheese sauce to make it extra creamy with cheddar and parmesan grated on top of the finished dish.

I have to make double quantities for tea in this house as we all have seconds and I snack on it later in front of the tv save some for my lunch the next day.

peppadews stuffed with cream cheese/boursin mix
numerous tarts - my no 1 fave is gruyere, sorrel and spinach, but I also love leek and goats cheese
puff pastry tart with caramelised onions and camembert
feta dip - with oregano, cream cheese and ex v oo
parmesan on everything Italian but especially pasta, pizza and shavings on salad

making it healthy - is about how much you have, and in essence, about how you divide it as it were. So if you don't want to eat too much, then grate or shave it, or slice with a mandolin or cheese slice. For use in cooking, use a stronger cheese so you don't need so much for flavour eg extra mature cheddar, parmesan etc

This is the carbonara I made tonight - there's parmesan in it so does that count?

For 2 adults - in the order you do stuff

Put on full kettle
Cut up 1/2 pack of bacon with scissors (smoky is nice)
Fry bacon in olive oil
While bacon is frying, start to cook 200g spaghetti (with water from the kettle you just boiled)
While bacon fries and spaghetti boils, mix up 2 egg yolks, 2 tbsp creme fraiche (I used half-fat, it was fine), ground black pepper, and a good pile of grated parmesan
When spaghetti done, tip a little of the water into the bacon to 'deglaze' the pan - get off all the tasty stuff that's cooked into the bottom of the pan
Drain spaghetti and throw into bacon pan and swirl around
Turn off heat - if using an electric hob take properly away from heat
Add cheesey mixture to spaghetti and bacon and swirl around

My question would definitely be how to eat lots of cheese in a "healthy" way.

Trillian I do a very similar recipe which is also very yummy (and quick), with a couple of differences...

Mine serves 4, and includes a couple of chicken breasts (or some boned/skinless thighs). Fry bitesize chunks of chicken with the bacon.
Then, instead of adding your parmesan mixture, I stir through some blue cheese (stilton, roquefort, cornish blue etc.) chopped into little cubes.

The children won't eat blue cheese, but they wolf this down and it's good for using up a bit of blue cheese when you run out of idea.

once you have fished your cheese rinds out the soup, remember to put them out for your gardens birds. high fat foods are very important to them in this cold weather

I love barbecued Halloumi - I serve it with a dressing made from olive oil, lemon juice, garlic, black pepper, mustard and fresh coriander.

Top tip (and I am a Lake District Cheese fan - I prefer it over all other brands - check my firdge!! wink) for cheese on toast.

Take slices of bread, top with finely sliced onion (red preferably), a good cheddar and slices of tomato and whatever seasonings you might fancy (picked gherkin works well if you like them).

Pop in the oven on a grill pan, around 150-180 degrees and cook (note NOT grill). You get lovely crunchy melba toast style cheese on toast with extra flavour.

Works well with grated cheese and finely chopped ham as I found out the other day, too.

I's the oven cooking of the bread which makes lovely.

Fried cheese is lovely, and lower in fat than most ways of eating cheese.

Heat a frying pan without any oil, then slap in a few slices of a fairly solid cheese (cheddar is ideal). The pan needs to be quite hot so that the cheese browns without melting. Watch it, and turn it before the middle melts. While the second side is browning, tip the pan slightly to let the melted fat run away from the cheese. This way when you take the cheese out of the pan you leave a lot of its fat behind.

Eat immediately.

I love cheese, eat it with everything!

Some favourites at the moment:
Cheese and beans on toast (cheese on top)
Mini pizzas, made with pitta, naan or just normal sliced bread
Homemade cheese and onion pie, with mash in
Pizza pies (basically cheese and whatever else you fancy on) flaky pastry
Cheese and grape buttys with a bit of salad cream

I could go on but I really need to go to bed now

A good way of using up left over cooked chicken or turkey.

Make a sauce, out of 1/2 chicken stock, half milk, thickened with flour. Add lemon juice, grated mature cheese and rosemary to taste. Place chopped up cooked chicken/turkey in an ovenproof dish and pour over the sauce. Bake in a medium oven for 20 mins and serve with pasta.

Funny after posting on this yesterday, my husband has come home and said he fancies going on a weekend break to Lake District (this morning did a feature on walks with our dog there!) Now desperate to go and breathe the lovely clean air and relax in the lovely scenery and eat lots of nice local food!

Will def buy some Lake District Cheddar to have on our cheese on toast tonight in honour of our forthcoming weekend away! Woohoo!!

Okay. This is my favourite recipe for the kids:

Works well with pasta or rice.

Boil pasta or rice in a pan. When it is almost cooked pour in mixed frozen veg and cook for another 3 minutes.

Sieve and put a thin layer in the bottom of a bowl for each child and then grate any kind of hard cheese over it. Then put on another layer and grate the cheese again etc. etc. until the bowl is full. Leave to cool for a bit.

Kids now eat the pasta/rice but can't help eat the veg as it is glued on with cheese.

Also you only have one not very dirty pan and few bowls to wash up.

When it starts getting cold and moving into winter, for me the one consolation is Leek and Stilton Soup!

I chop some leeks, onions and potatoes. Cook them gently in butter. Add veg stock and milk. Allow to cook through slowly. When potatoes cooked through blend. Add stilton (trying not to deliberately get the stilton on your fingers for licking). Allow to melt into the soup and cook slowly! Stirring occasionally to stop it sticking at the bottom of the pan. Add cream for extra luxury.

(for those that add salt etc, season as necessary. I tend to find the veg stock is enough)

Serve with crusty bread (no need to toast a little stilton on the crusty bread at nom nom)

The whole family wolf this down.

My other favourite is the very simple Mozzarella cheese with beef tomatoes drizzled in a little olive oil.

Please don't get me started on fried Halloumi. Surely a gift from the gods! grin

add a blob of chutney or something

Under the grill right now:

stilton and home-made chutney
brie and cranberry sauce

No one mentioned cheese scones yet? They are the very business for non-sweet-toothers like me to have with a morning cup of coffee, or with tea in the afternoon.

My children like them as an after school pre-dinner snack.

And they are perfect for picnics, school lunch boxes or to take on the first day of camping.

One more thing - if you have any milk that is just slightly going off, then that makes the perfect scones.

55g/2oz butter at fridge temperature
225g/8oz self raising flour
pinch of salt
1/2 tsp dry mustard powder
25g/1.5 oz strong mature cheddar cheese
150ml/5fl oz milk preferably just on the turn

Sift the flour in to a bowl with the salt and mustard powder.

Rub in the butter.

Stir in the grated cheese.

Add milk gradually and work into the mixture with your hands until you get a soft dough.

Put dough on a floured work surface and knead very gently. Pat out to 2.5cm thick and cut into rounds using a small pie cutter.

Bake at gas 6/7 on a lightly oiled or buttered baking tray, with a little milk brushed on the tops of the scones, for about 15 minutes until well risen and golden brown.

Eat on the same day or freeze!

Or spread some pesto ontop of a fillet of fish, sprinkle with cheese, and grill.

Made The Best soup for tea tonight to use up the last of the Christmas stilton.

Boil 2 heads of broccoli until tender. Drain off some of the water. Zizz up with a hand blender till smooth. Add leftover stilton and zizz again. Add back water you drained off until it's a nice consistency. Serve with bibbity 's scones!

DD LOVES broccoli and stilton soup and I reckon it's pretty good for her too.

I do have a real weakness for cheese, but it's definitely not good for my waistline. I do find, though, that if I'm making cheese on toast and mix the cheese with some finely chopped onion or spring onion, it goes so much further without adding too many calories and is extra tasty.

Hmm. I initially thought I didn't know any actual recipes with cheese, then I thought again...

1970's supper dish - boil some chopped onions for around 10 mins, then drain and stir in grated cheese til melted. Serve with bread and butter. Guaranteed not to give you bad dreams/indigestion/stinky farts...hmmblush. It's another don't knock it till you've tried it dish.

Student/nursery food dish - cheese and rice layer pie. Boil 2oz rice and place in buttered pyrex dish. Top with layer of grated cheese, then a layer of mixed finely chopped tomatoes and onions (you can use well drained tin tomatoes) and finally a layer of grated cheese and a sprinkle of breadcrumbs. Cook in medium oven (gas 4) for 20 mins.

Dh contribution - Cheesy beans on toast - toast, then slices of cheese, then hot beans - the cheese melts (he's never cooked me this though...)

Grown up salad - feta salad. Cubed feta, black olives, spring onions, tomatoes and cucumber with lots of olive oil, lemon juice and chopped fresh mint dressing and french bread to mop up the juices.

Festive pudding - you must have a slice of Wensleydale with your Christmas Cake. It's the best.

My English suppli are a made-up recipe as a variation on Italian suppli.

Cook pan of white rice in (pureed) tin of tomatoes, crushed garlic, herbs of your choice and seasoning.
When rice is cooked, consistency should be sticky.

Spread rice out on cold plate to cool.

Cut cheese (cheddar, Boursin or indeed any cheese) into 1cm ish cubes.

Make balls with rice, putting cheese in centre (ensure cheese is fully covered).

Shallow fry until golden.

Serve. Eat. Yum.

My tuna pasta bake.

Cook pasta, drain and rinse under hot kettle water, put pasta into a large casserole dish and add to pasta a tin of drained tuna (I use the one in spring water), mix thoroughly. Add half a tin or more of sweet corn and mix in along with as much or little creme fraiche as you like. Add grated cheese to the entire mixture or just on top and put into a hot oven for about 20 minutes. Delicious!

1 tea spoon mustard

Two favourites my Mum used to make when my Dad and sister (non-cheese eating freakoids) were out. Happily I can now make them whenever I like!

1) Slice up lots of onions. Cook them really slowly in olive (or other) oil until they go all soft and squishy but not brown. Add a tin of chopped tomatoes (or fresh ones if it is summer and you have a glut). Simmer a bit. Now add as much grated cheddar cheese as you think you can possibly eat in one go. Stir the pan until it is all melted together. In the meanwhile, cook a pan of spaghetti. Apply sauce to spaghetti and eat. (And put the saucepan in to soak right away or you will have a nightmare getting it clean.)

2. Cheese Pudding. This uses stuff up. Take old bread and cut it up into cubes, not too small. Beat together any eggs you have lurking around that need using up. Add milk, salt and pepper. Pour over the bread. (If not enough to cover the bread, add more milk.) Grate cheese (lots). Mix it in. Leave the mixture to stand until the bread has absorbed all the egg goo.(I do this overnight, but it only really needs a couple of hours.)Pour into a buttered dish and bung in the oven until it is golden and risen.

AG - my mother used to make me Cheese Pudding when I was little. I'd forgotten all about it! It is absolutely gorgeous.

I heart cheese so much!

My pikey-lady's tip is to keep the rinds of strong hard cheeses like Parmesan, then use them to make cheese sauce (white sauce with cheese). Sieve it before serving so you don't actually eat the old chewy rinds but you get a lovely tasting sauce without having to use up premimum quality eating cheese (which you can instead nibble on whilst making the cheese saucce!).

My mums chesse and potato pie

Peel lots of potatoes and slice into rounds
Boil until just cooked then drain
Make a pint of thin white sauce with lots of white pepper to taste not too much salt as the cheese is salty.
Grate a mountain of cheese. Preferable strong cheddar

Layer in a casserole dish, potatoes,grated cheese then sauce. Keep layering finishing with potato and cheese on top.

Bake for about 1 hour until crispy and golden. Yummm

We used to have it with tinned tomatoes (very 70's)

But now we have it with roasted cherry tomatoes and broccoli or green beans

really easy summer lunch/supper dish.

Take a roll of ready rolled puff pastry and divide it into four squares(ish). Place on greased baking sheets. If you can be bothered, score a line about a cm in from each of the edges (helps the rim rise).

Smear some pesto on each of the "inner" squares. Slice a tomato on each of them. Drizzle some olive oil on top. Slice mozzarella on top - although you could use any hard cheese.

Bake at 200C (fan oven) for about 20 minutes - until pastry is golden.

I LOVE cheese of all sorts, and DS1 likes eating chunks of cheddar but is a bit wary of anything too strong or "different".

If you are on a low GI diet, cheese crisps are the business. Put grated cheese in little piles on a microwaveable plate (or just on the turntable) and then zap for 30 secs or so (you can increase by 10s increments). Yum

And guacamole - my cheese straws are crunchy - I make them with (ready made) puff pastry rolled out, sprinkled with parmesan and then folded in half before rolling out, sprinkling again and cutting and twisting into straws. I think the trick is to cook them for longer than advised - they need to be nearly burned before they go crunch

Ds1's favourite meal of all time is one that my mum heard on the radio in the 1970's in a feature about thrift.

In an oven-proof dish...
1) A layer of baked beans (dh likes leftover cooked bacon/sausage/cabanos mixed in with his).
2) Then a layer of mashed potato (fresh or leftover).
3) Lastly a good thick layer of grated cheese (a single variety or mixed, doesn't matter) with a dash of worcestershire sauce if you're that way inclined.
4) Bung in the oven until golden and bubbling.

My mum made it for us, it saw me through many a skint time at university and now ds1 ADORES it. My mum called it 'cheese and potato pie' but we now know it as the less classy 'cheesy beany mash' grin. It also goes brilliantly with a certain brand of brown sauce.

LadyBiscuit - did you see Baking is Easy last night? Lovely recipe for parmesan and poppy seed 'lollies'.

Grated Parmesan, mixed with sesame and poppy seeds, put in rounds on a baking tray (using a ring cutter to keep it perfectly round), and placing a lollipop stick on the middle of it, so that it melts into the cheese as it cooks.

Mascarpone makes a quick & easy creamy pasta sauce.

Cook any veg you want to use, add mascarpone to saucepan until it melts & then mix in pasta. Sprinkle with grated cheese & serve. Yummy.

I add mascarpone to my quiches too.

Whisk your eggs is a large bowl then add half a tub of mascarpone (for a large quiche). Then add all your other ingredients to the bowl of egg & mascarpone & mix. I usually use thinly sliced onion & mature cheddar. (but broccoli, chunks of salmon & cheddar is nice too) I find it makes a much more even quiche by mixing it all up together.

Cream cheese will substitute for mascarpone in all of these recipes & be nearly as good

I just wanted to say what a brilliant weekend I had in The Lakes at LucyCooks. I took my husband and we did the Cumbrian cookery day.
From start to finish we laughed, had fun, ate too much and made new friends. The school was beautiful and very well run. We had a delicious lunch served with wine and got to bring all the lovely food we had made.
We booked into a local Inn to extend our stay and got refunded the money for that the next day.....we got up in middle of night to investigate a strange clanking noise and bumped in to the manager who was mortified we had been woken up. When we checked out, the member of staff said she'd been told not to charge us because of our disturbed sleep. We could not believe our luck!!
