Batch cooking

Do any of you batch cook and freeze meals in portions?

I'd like to do this but I'm sure I'll poison myself!

I cook curries - meat and veg - bolognaise, chilli, shepherds pie and things like that. Will it all freeze well?

How would I defrost things, or would I cook them from frozen?

Questions questions! Grin

Yes always batch cook and freeze, casseroles, chilli's, bottom for Shephards pies etc, not frozen anything with a yogurt based sauce. If its a gravy or tomato based sauce you can't go wrong, I just get it out of the freezer and leave to defrost overnight in fridge or on the worktop in the day ready for tea, then you just have to cook the rice, pasta, potatoes etc.. I tend to reheat in the microwave or pop it in a pan on the hob and leave it to bubble away for a few mins.

If you think you want to freeze you probably need to do so before you add the yoghurt at the end. I plan on doing this with curries and then just add fromage frais etc when I have reheated it. Spag bol etc freeze beautifully.

Cottage pie freezes brilliantly (even with potato on top) I make mine up then defrost and brush the potato with beaten egg then put in oven @ 200c for 30 minutes. I also freeze soups, chilli, bolognese. It's fab to have something quick from freezer. Defrost on worktop overnight then into fridge next morning till you use it.
