I've made ordinary gingerbread men before which are kind of bicuity.

Then the other day I bought a gingerbread shape which was much more chewey, almost bread texture ratehr than biscuit. Anyone got a recipe for this type?

I use this one. Recipe at bottom of page. Not sure if it's what you are looking for - it's a bit biscuity and a bit chewy. But we all love it.

Thanks, that's certainly qute different from my usual recipe so will try that one tomorrow.
