Recipe of the week

smithy's roasted beetroot: low-fat, dairy-free, gluten-free, nut-free and generally nutritious and virtuous. This one-dish wonder is delicious and uses up some seasonal beets. What's not to like?

Block of Mild cheddar cheese grated.
Onion, I just used half an onion so it wasnt too strong, sliced very finely.
Roll of ready rolled puff pastry, or you could make your own.
1 egg beaten, to glaze.
fresh ground pepper.

Pre-heat oven to 200.
Cut pastry into squares, pastie sized.
Place one square on to baking tray (use baking paper to prevent it sticking underneath)
Handful of cheese and a pinch of diced onion, fresh ground black pepper.
Place another square of pastry on the top and crimp around the edges with a fork.
Brush on beaten egg. Prick to let out he steam.

Repeat with however many you need.
Place in oven for 20-25 mins until golen brown.
Take out, leave to cool slightly as cheese filling can be very HOT!

Serve with salad and enjoy!

thanks for recipe - have copied it and will certainlt use! Potato would work well there. And a bit of mustard powder for people who like it hot (like me!) smile

I use potato too - just some thinly sliced pieces - just bulks them out a bit.

We use potato mashed and added with milk as well.

I like to do little ones in jam tart cases:

Shortcrust pastry in jam tart cases - prick the bottoms with a fork and bake blind for a few minutes.

Fill with a mixture of mashed potato, lightly fried onions and lots of grated cheese then bake until brown and crispy on top. These are good cold in lunchboxes - or would be if fussy dd1 would actually eat cheese.

Aw, I got all excited then but I only have shortcrust pastry and DH has just eaten the last egg.
Can you please put this in the recipe section? (So I don't have to cut and paste and then forget where I've saved it when I finally get round to buying the pastry...smile)
