Any good Dairy-Free cake recipes?

I want to say thank you to a friend who has loaned me a ton of Maternity Wear. When I return them, I intend on taking flowers and wine etc, but also thought it may be nice to make her cake as she is totally dairy free (breastfeeding a dairy intolerant 1 year old) and sort of think that she has given up a lot of her favourite things in order to carry on BF this long.

She can't even have just lactose free at the moment as they arent sure which part of the milk her LO is intolerant to.

Could anyone recommend a really nice cake recipe that would suit her needs?

assuming she can have egg then just make a regular cake but use dairy-free margarine

How about some fancy biscuits like biscotti? They are really easy to make and as you choose the flavourings you can put what you like in. These are also really really good if you can find dark chocolate that is milk free (and some people who are dairy intolerant are soy intolerant too). It does exist though!

170g soaked prunes
150g dark chocolate
200g dairy free margarine (eg pure or vitalite dairy free)
300g brown sugar
3 large eggs
50g pecans
100g SR flour
2tbsp cocoa

- melt the margarine and chocolate
- stir in the eggs and sugar and beat well
- add the nuts, flour and cocoa
- fold in the prunes
- spoon into a smallish square lined tin and bake for about half an hour
- mark into squares while warm

I'm dairy free and just make stuff using Pure. This weekend I made a chocolate orange marble cake and instead of icing I melted some dark choc onto the top.

Hmm, will check on the egg-front, and didn't realise there was so much stuff dairy free out there, I just thought lactose free, and she definetley said all dairy. I know she can eat these certain ginger biscuits, so I think they must have egg in them

make a flapjack, I take a batch of this in to work sometimes and it has usually vanished by lunchtime:

flapjack just isn't as nice without real butter in though sad with cake you don't notice it quite so much

Any cake with butter but replace the butter with soya margarine. Or James martins carrot cake is an oil one. Or bbc good food apple and cinnamon cake is oil as well
