veggie mains?

Can anyone recommend me some t & t veggie mains please?

Ooh, I will watch this with interest.

We have curry fairly regularly, and the DC always eat it:

Fry a couple of onions, add ground coriander, ground cumin, garam masala (sometimes curry leaves, curry powder, cumin seeds), then add diced potato (and/or sweet potato) and usually a bag of spinach or a couple of blocks of frozen spinach, a tin of tomatoes, some low salt bouillion and some water. Then add a tin of chickpeas once it has been bubbling for a while. Often I just bung in whatever tired old veg we have lying around. Serve with naans, and rice or cous cous.

Also, we have Quorn spag bol in the slow cooker a lot (think I got the recipe on here):

Chopped onion, packet of Quorn mince, couple of cloves of garlic, basil, two tins tomatoes - give it a stir, then add one last tin of toms over the top. Bubble away for several hours.

Pesto is always a good standby, too. When the DC are whingy and tired and we need something quick and easy. If we're okay for time, I usually fry off an onion or two, mushrooms, maybe some courgette and add that. Sometimes I add a tin of peas for some extra green stuff.

I'm just trying to cut back on meaty meals and get more veg in the kids!

Lasagne, made with layers of mushrooms, spinach, peppers and tomato. (Tinned tomatoes are great.)

Also lovely with a soya mince or quorn layer, as spicy as you like.

All with a vegetarian cheese sauce on top.

My real favourite is using pancakes instead of lasagne. Free range eggs, of course. So you have layers of savoury pancake, in a lasagne style. Baked in the oven till the cheese is bubbling and turning brown.

Our current favourites include:

Baked risotto with leeks, peas, artichokes, asparagus, broad beans - just a mixture of green vege, basically.

Sausage casserole using Sainsbo's veggie hotdog sausages, passata, grainy mustard, honey, paprika and either a tin of green beans or a tin of butter beans - with hassleback potatoes.

Leek and cheese quiche or cheese and caramelised onion quiche, with roasted new garlicy potatoes and salad or steamed sugar snaps/carrots/asparagus.

Shepherd's pie - make the filling from Quorn mince in the slowcooker, then transfer to an oven proof dish and top with mash and cheese.

Chilli and rice.

Vege and paneer curry with naans and salads/chutneys (midweek I usually cheat and use a jar but if I make it at the weekend I tend to use a tweaked version of a Jamie O recipe using coconut milk and finely chopped fresh tomatoes.

Thai veggie curry (I use a bought paste) and rice or noodles.

Veggie sausage baguettes with salad and balsamic onions.

Homemade wedges, omelettes and peas or salad.

I've recently started to make Colcannon a lot as it's great for winter seasonal greens. Something I struggle to enjoy.

Use a 50 /50 mix of potatoes and other root vege, such as carrots, celeriac, sweet potatoe etc - 6 handfuls. Mash as normal with butter and milk.

Then 3 handful of greens, leeks, brussel sprouts, kale etc. Sauteed.

Dollop of mustard and mix it all in. Squirt of lemon if you like.

Also saw at a caf savoury pancakes with courgette inside. If anyone has a recipe for them. I'd be keen to try it.

Dosas are yummy. I've only ever made them from the packet mix you can buy and it's a bit of a faff even then to do the sambar (sp?) and chutneys etc for serving with them but really, really lovely to eat.

Gave it a go. Quite easy, cheap and yum

bean chilli, lots of beans & peppers & mushrooms - wiv jackets, rice, nachos, in pitta or turn into enchillarders
veggie lasagna - made with chunky veg, red onion, courgette, mushrooms, peppers, tin toms, sometimes lentils/chickpeas added
lentil curry
bean burgers made with lentils, chickpeas, sweetcorn, grated carrot, onion, sunflower & pumpkin seeds
i do a spag bol type sauce but made with lentils instead of quorn or sometimes 50/50 & a couple of grated carrots
butternut squash risotto
cous cous with roasted veg - can add veg sausages
