Filo pastry?

Food Tech practical combined with forgetful DD means I have a packet of filo pastry that should have been used at school yesterday but was left behind in the fridge. Any ideas what I can do with it? Something savoury, preferably, but all suggestions welcome.

Tyropitakia, little greek cheesepies.

Do you have any cheese and eggs? Feta cheese or a mix of feta, cheddar and mozzarella. Crumble the feta/mozzarella or grate in strands the cheddar, mix with lightly beaten egg(s), peper and any herbs like chopped parsley/dill, maybe a pinch of paprika. I don't follow a specific recipe, but start by crumbling the cheese (200gr +) and then add an egg or more and combine into a moist crumbly creamy mix that you can hold on a spoon. If it's too wet then it's hard to keep inside the wrapped fylo.

Cut your filo in long strips, brush with olive oil and place a teaspoon of the filling on one end and start folding the filo over in a triangle, continue folding it over till you have a little triangular wrap. Don't use too much filling or make the wrap too tight, the egg expands a bit when cooked.

Either shallow fry or (healthier and less messy) bake till golden brown.

It's easy, lovely hot or cold.

Thank you metalelephant, I made samosas in the end but had so much left over I had to freeze it, so I'll be trying your recipe soon. Sounds delicious.
