I tend to use Delia's recipe although rather than jointing a whole chicken I tend to just use a few thighs.
However, the Ottolenghi multi-veg paella was a revelation. I actually prefer his veggie version to the meaty/fishy ones I tried.

I use Gordon Ramsay's recipe from The F Word - sorry, don't know how to do links. I must have cooked it dozens of times now and it's always got rave reviews.

Not a traditional paella, but this recipe is lush and dead easy. Plus you can bung it in the oven and leave it, giving you lots of time to enjoy many aperitifs entertain your guests.

The only time I've had proper paella was on a work jolly in Barcelona so I can't really remember
You could use paella rice instead of the risotto rice I guess, they're pretty similar. Tbh though I usually use basmati because we always have stacks of that in and I never remember to buy anything else!
