Allergy friendly MN cake

I tried one of quick & easy MN cake recipe with allergy friendly ingredients and it's fab. I just wanted to share it with others with dc who suffers allergy. It's a basic sponge so you can use it as a base of simple cake or fairy cake, cupcakes, etc.

Flour : change it to non wheat flour 120g
sugar: 120g
Butter: use marge or olive oil 120g
Blits everything in food processor(or mix with wooden spoon)
add
egg: 2 replace with egg replacer 2tsp+ 4TBs water

  • 50g non dairy yogurt

    MN video says microwave, but cook in the oven for appro. 15 mins has better result.

    It's best allergy friendly cake I ever made. It's fluffy and moist, unlike other cakes I ever made. Yummy.

I highly recommend Crazy/Wacky Cake, it's my go-to easy cake recipe and happens to be vegan already - no milk, butter, or eggs. Works absolutely fine with gluten free flours too!

I've linked a recipe with weights, but note the frosting on that page uses butter! We like it with just a sprinkle of icing sugar on top. :)

Forgot to add baking powder: 2tsp to the recipe. I assume it won't get fluffy without it!

Tomorrowillbeachicken, I know, but there must be lots of primary children who suffers from allergy like my ds, and I feel most comfortable on this board.Grin
